Are You Tired of the Same Old Potato Dishes?

While thinking of what I was going to prepare for dinner, I knew I wanted potatoes—but I didn't want any of the same old potato side dishes that I always make. My family loved the recipe I ended up making, and I plan to make it again and again. I hope you enjoy it as much as we do!

Prep time: 15 min
Cook time: 1 hour
Ready in: 1 hour 15 min
Yields: 5–6 servings

Ingredients

  • 6–7 medium potatoes, quartered
  • 2 tablespoons extra virgin olive oil
  • 2 cooking onions, quartered
  • 4 large cloves garlic, thinly sliced
  • fresh ground pepper
  • sea salt
  • 1/4 teaspoon paprika
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a bowl, toss the potatoes with extra virgin olive oil and place them into an oven-safe casserole dish.
  3. Add the onions, and sprinkle the garlic on top.
  4. Add the pepper, salt, and paprika. Then sprinkle with Parmesan cheese.
  5. Place in the oven and bake for 30 minutes. Remove the foil and return to the oven for 15 to 30 minutes, or until the potatoes are browned and fork-tender.
  6. Remove from the oven. Serve and enjoy.

      Audrey, I use onions all the time too. Have always loved them. When I was a little girl I would choose sliced onions over candy.

      Oh, this recipe is calling to me and sounds so delicious! I don't eat meat so I'm always in the market for great-tasting veggie recipes. I add onions to just about every dish I come up with. They seem to always add a wonderful flavor to most recipes.

      Interesting potato dish. I think those who do not relish parmesan cheese can go for cottage cheese or tofu in it's place.

      This sounds delicious and easy to make, with some interesting combination of ingredients. Onion and garlic are almost a regular in my kitchen. But, I haven’t tried the potatoes in this way.
