Sweet Potato Mango Recipe

I am a vegetarian, and therefore, I love to experiment with different vegetables and fruits in order to construct a new recipe. I love the use of exotic fruits, such as mangoes and pineapples, that are not used quite as frequently as some of the more "normal" fruits, like apples or oranges.

I find it interesting and creative to make a new dish that hasn't been made before and to make it with fruits and vegetables that are not normally used.

I also love to present a dish that is somewhat different and hopefully will make your mouth water.

Ingredients for Sweet Potato Casserole

  • 3 Sweet Potatos, Medium
  • 1 cup Brown Sugar
  • 1 can Crushed Mango;s, 8 oz.
  • 1 can Pineapple rings, 8 0z.
  • 1 Jar Cherries

Recipe Instructions

  1. Peel sweet potatoes and cook until tender.
  2. Cut off the top and bottom of the sweet potatoes, so it is a flat even surface and will stand independently. Let cool.
  3. Open a can of crushed mangoes and drain the juice. Set aside in a bowl.
  4. Add the brown sugar to the bowl of mango juice, and mix until dissolved.
  5. Pour the mango and brown sugar mix into a small sauce pan.
  6. Cook on low hear until the brown sugar starts to caramelize, about 20 minutes, stirring occasionally.
  7. Place the cooled sweet potatoes cut flat at the top and bottom in a casserole dish, standing in the casserole dish independently.
  8. Pour mango-brown sugar mixture over sweet potatoes.
  9. Spoon crushed drained mangos over sweet potatoes.
  10. Cook in over for 15 minutes at 350 degrees.
  11. Remove casserole dish from oven, and let cool 10 minutes.
  12. Top with a ring of pineapple and a cherry in the middle.
  13. Serve immediately.
  14. Serves 3. If you want to serve more people, then use a larger casserole dish, and prepare additional sweet potatoes.
