Barfi is an Indian, milk-based sweet prepared with milk, clarified butter and sugar. Building upon the basic recipe, many additions and variations exist. It can be made with gram flour, mung beans, or split chickpeas. Many different kinds of nuts can be added, like cashews, almonds, pistachios, peanuts and more. Fruits like mango, figs, bananas, etc, can be used for flavoring. Cardamom powder is often used, as well.

The barfi we are preparing today is a very simple, easy-to-make, 7 cup barfi that is traditionally a South Indian dessert.

  • 1 cup besan (gram flour)
  • 1 cup coconut powder
  • 1 cup cashews, ground and sieved to a fine powder
  • 3/4 cup desi ghee (clarified butter)
  • 2 cups sugar
  • 1 cup milk
  • 1/2 teaspoon cardamom powder


  1. Dry-roast the gram flour on low heat until its aroma can be perceived.
  2. Add the coconut powder and roast for 1 minute.
  3. Add the cashew powder and stir-roast for 1 minute.
  4. Add in the clarified butter and mix well. Roast the mixture for 2 to 3 minutes on low-medium heat.
  5. Add the sugar and stir mix until the sugar melts completely then put off the heat.
  6. Add the cardamom powder, stir well then add the milk. Stir constantly until the mixture is smooth. Now put on the heat, keep it on low and stir-cook until it thickens, starts releasing the ghee and turns into a thick, moist mass. Put off the heat.
  7. Pour the mixture into a greased mould and level it with a ladle. Let it cool down completely and set firmly.
  8. Cut the barfi block into pieces and serve. Store the remaining barfi in an airtight container and refrigerate.
