Anda Bhurji (Indian-Style Scrambled Eggs) Two Ways

Today I am sharing two different recipes for anda bhurji, or Indian-style scrambled eggs. They are different from each other in terms of appearance, texture, colour and taste. They are, however, equally delicious!

These recipes call for readily available spices that are used in everyday Indian cooking. The recipes do not incorporate special spice mixtures that may be harder to find. Also, neither recipe calls for garlic or ginger, though you could certainly add one or both if you like.

In my family, we enjoy anda bhurji for breakfast along with roti or paratha. You can have it with any type of bread.

Each recipe makes 1 serving

Recipe 1: Coarse-Textured Anda Bhurji

Ingredients

  • 2 eggs
  • 1 tbsp oil
  • 1 tbsp butter
  • 1 medium onion, chopped
  • 1/4 tsp salt, or to taste
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/2 tsp red chilli powder
  • 1/2 chopped green chilli
  • 1-2 tbsp chopped hara dhania (cilantro)

Instructions

  1. Whisk the eggs lightly and set aside.
  2. Heat a nonstick pan on low-medium heat. Add the oil and butter and let the butter melt.
  3. Add the chopped onion and saute over medium heat until it turns light pink.
  4. Reduce the heat to low and add the salt, turmeric powder, coriander powder, garam masala and red chilli powder and chopped green chilli. Stir for about 1 minute.
  5. Raise the heat to medium and the whisked egg and chopped cilantro. Stir and cook until the egg is just cooked. Remove from heat and transfer to a bowl.

Recipe 2: Fine-Textured Anda Bhurji

Ingredients

  • 2 eggs
  • 1 tbsp oil
  • 1 tbsp butter
  • 1 medium onion, chopped
  • 1 chopped green chilli
  • 2 medium tomatoes, finely chopped
  • 1/2 tsp salt
  • 1 tsp coriander powder
  • 1/4 tsp garam masala
  • 1/4 tsp red chilli powder
  • 1/4 tsp kashmiri red chilli powder
  • 2 tbsp chopped hara dhania (cilantro)

Instructions

  1. Keep a nonstick pan on medium heat. Add the oil and butter and let the butter melt.
  2. Add the chopped onion and saute until it turns light pink. Add in the chopped green chilli. Saute until the onion turns a little brown.
  3. Put in the chopped tomatoes and cook over medium heat until they are half done..
  4. Reduce the heat to low and add the salt, coriander powder, garam masala, red chilli powder and kashmiri red chilli powder.
  5. Raise the heat to medium and stir until the tomatoes are completely soft. Keep mashing the tomatoes. Saute until the masala is well roasted and brown.
  6. Add the whisked eggs and cilantro. Sir until the eggs are just cooked then mash it completely. Cook until completely cooked and then transfer to a serving bowl.
  7. Serve with roti, paratha or bread.
