This black chickpea salad is unique because it features a tangy raw mango dressing. Mildly sweet, spicy, and tangy, it makes for a filling and nutritious snack.

Ingredients

  • 1 cup black chickpea (kala chana), soaked in water for 8 hours and boiled
  • 1 tablespoon carrot, grated
  • 1 tablespoon onions, chopped
  • 1 tablespoon tomatoes, chopped
  • 1 tablespoon sweet corn kernels
  • 1/2 tablespoon mint leaves + coriander leaves, chopped
  • 1/2 tablespoon raw mango, grated
  • 1/4 teaspoon each red chili powder, chaat masala, and salt
  • 1/4 teaspoon sugar (optional; don't add if using sweet chutney)
  • 1 tablespoon roasted cashew nuts and almonds, sev and other fried tidbits, for garnish
  • 1/2 teaspoon mint chutney (optional; I used store-bought chutney)
  • 1/2 teaspoon sweet chutney (optional; I used store-bought chutney)

Instructions

  1. Wash the black chickpeas in water and soak them in fresh water for 8 hours.
  2. Strain the chickpeas and discard the water. Cook the chickpeas with fresh water until they become soft. This step may take 10-12 minutes in a pressure cooker. Strain it. You can use this water for making soup or rasam. Add the chickpeas to a mixing bowl.
  3. Add red chili powder, amchur powder, green chutney, sweet chutney, and salt. If you don't use sweet chutney, add sugar instead. Mix well.
  4. Add grated carrots, chopped tomatoes, onions, sweet corn kernels, and chopped mint-coriander leaves. Mix well.
  5. Finally, spread the grated raw mango on top. Garnish with roasted almonds, cashew nuts, and fried tidbits. Enjoy!
