A Unique, Crunchy Steamed Snack

Dhokla is a popular and nutritious snack that can be prepared in a variety of ways with different ingredients. The version below, made with cabbage and chickpea flour (besan), produces a unique, delicious, and crunchy snack.

Cabbage is a nutrient-rich veggie that can help control inflammation in the body. Packed with vitamin C, it may also be helpful in terms of improving digestion and lowering cholesterol and blood pressure.

Chickpea flour is a treasure house of protein, vitamins, minerals, and fiber. Chickpeas are rich in complex carbohydrates, and they have a low glycemic index, which makes them a good choice for diabetics.

Making cabbage dhokla is quick and easy. The tempering added to these aromatic dhoklas makes them even more tempting. Enjoy them hot with green chutney!

Ingredients

For the batter:

  • 1 heaped cup chickpea flour (besan or Bengal gram flour), sieved
  • 1 heaped cup cabbage, finely chopped
  • 3/4 cup curd or yogurt, medium sour
  • 1 tablespoon semolina
  • 1 tablespoon oil
  • 1 teaspoon cumin-coriander powder
  • 1/2 teaspoon red chili powder
  • 1 pinch asafoetida
  • 2 pinches turmeric powder
  • 1 teaspoon fruit salt or cooking soda
  • 1/2 teaspoon salt, or to taste
  • Oil for greasing, small quantity sugar to balance the taste (optional)

For the tempering:

  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon sesame seeds
  • 1 sprig curry leaves (about 6-8 leaves)
  • 1 pinch asafoetida

For garnishing:

  • 1 tablespoon fresh coriander leaves, finely chopped (optional)

Instructions

  1. In a mixing bowl, add Bengal gram flour (besan), semolina, chopped cabbage, cumin-coriander powder, red chili powder, asafoetida, turmeric powder, oil, and salt. Mix well.
  2. Add curd. Adding water little by little, prepare a batter that is the consistency of idli batter (dropping consistency).
  3. Grease a 7-inch diameter container with oil (this will be for cooking the dhokla). Place a cooker or steamer over medium-high heat.
  4. Add fruit salt to the batter. Add 1 tablespoon of water. When the fruit salt forms bubbles, gently mix it into the batter.
  5. Pour the batter into the greased container and place it inside the cooker.
  6. Steam for 10 minutes. Turn off the heat. Take the container out of the steamer and set it aside for 5 minutes.
  7. Make the tempering for the dhokla: Heat oil in a pan. Add mustard seeds. Allow them to crackle. Add sesame seeds, curry leaves, and asafoetida. Mix well. Spread the tempering over the dhokla.
  8. Cut the dhokla into equal-sized square pieces. Serve it hot with green chutney or tomato sauce. Enjoy eating nutritious and delicious dhoklas!
