Tambuli: A Beverage Made From Oregano Leaves

In the local Kannada language, tambuli is the name for a delicious and soothing drink made from oregano leaves.

Oregano is an aromatic Eurasian plant related to marjoram that contains many nutrients and medicinal properties. This herb is believed to have antibacterial and anti-inflammatory properties. It is also believed that it can help prevent cancer formation in the body. People use oregano to treat colds, bronchitis, muscle pain, bloating, acne, etc. You can easily grow this herb in pots.

Ingredients

  • 2 cups oregano leaves, washed
  • 1/2 teaspoon cumin seeds
  • 8 peppercorns
  • 1/4 teaspoon ghee or oil, ghee or butter preferred
  • 1 1/2 cups curd or yogurt or buttermilk, moderately sour
  • 2 tablespoons grated coconut

For the tempering (optional):

  • 1/2 teaspoon ghee
  • 1/2 teaspoon mustard seeds
  • A few curry leaves

Instructions

  1. Wash oregano leaves in water.
  2. Heat ghee or butter in a pan. Throw in cumin seeds and peppercorns. Let the cumin seeds crackle. Add oregano leaves. Saute until they become soft. It may take about 5 minutes. Set aside the mixture to cool.
  3. In a mixer jar, add the grated coconut and oregano mixture. Grind together with some sour curd/yogurt or with water. Grind until it becomes a smooth liquid. Transfer it to a bowl.
  4. Add remaining curd/yogurt and salt. Mix well. Add sufficient water to bring it to the appropriate consistency for drinking.
  5. The oregano leaf drink is ready to serve, unless you want to add the optional tempering. If you want to use it only for drinking, there's no need to add the tempering. If you want to use it as a side dish, add the tempering. It undoubtedly enhances the flavor.
  6. To make the tempering: Heat ghee/butter in a tempering pan or any small pan. Add mustard seeds. Let them crackle. Add a few curry leaves. Mix well. Turn off heat. Pour it onto the oregano leaf beverage. Mix once.

Important Tips

  • Serve the oregano leaf beverage in a glass for a better presentation.
  • Store the remaining beverage in the refrigerator. It's fun to have this beverage chilled.
  • This beverage stays fresh for a day when stored in the refrigerator.
