Ingredients

  • 2 cups rice, cooked
  • 2 pieces salted duck eggs, chopped
  • 2 tablespoons homemade garlic bits
  • 1 tablespoons parsley, dried
  • salt, to taste
  • pepper, to taste

Instructions

  1. Separate eggs whites from egg yolks. Chop egg whites and slightly mash egg yolks. Set aside.
  2. Heat small amount of oil into a pan.
  3. Add egg yolks and rice. Mix well.
  4. Toss in the egg whites and fried garlic.
  5. Sprinkle some salt and pepper to taste. Serve while still hot.

Tips and Techniques

  • Separate egg yolks from egg whites before chopping the latter into pieces.
  • Leave the egg yolks a little bit chunky to taste.
  • Best served with your favorite breakfast dish.
  • Use leftover or a day-old fluffy rice to give a better texture.

I agree, Asian stores make it easy for us to spot this kind of eggs. It's a bit expensive though compared to normal eggs, but worth it.

Yes, you can replace it with any eggs. Try using chicken eggs. All you need is to prepare a salted brine solution. Then let raw eggs stay there for 3 weeks or so. You can make batches of different amount of salt in brine solutions. This way you can do some sort of experiments so you can come up with salted eggs based on your preferred saltiness.
