How to Make Koularakia (Greek Easter Biscuits)
These biscuits bring back memories of my cooking days with my Greek grandmother and mother.
We would prepare large trays of sesame-dipped plaited biscuits and bake them in the oven for the whole family to enjoy. Delicious smells would waft from the kitchen, with much laughter and chatting during the preparation, of course!
Although koularakia are traditionally made at Easter time, we now bake them all year round. Enjoy these crispy biscuits with a cup of coffee or tea, which is perfect for dipping. It's hard to eat just one!
These are easy biscuits for the family and kids to enjoy making together around the kitchen table.
I’m sure there will be a few favourites among my family’s passed-down recipes that will become favourites in your family, too. Enjoy!
Yield: 50 biscuits
- 500g self-raising flour
- 125g unsalted butter
- 125g castor sugar
- 2 teaspoons vanilla essence
- 3 eggs
- 1/3 cup milk
- In a bowl, rub together the flour, butter, sugar and vanilla essence until a bread-crumb texture is reached.
- Add the eggs and milk and mix thoroughly to form a dough.
- Take about 2 teaspoons of the dough and roll it into a very thin, pencil-width log. Twist the dough 3 times the get a plait effect.
- Alternatively, you can make a circle shape.
- These biscuits rise a lot, so make sure the biscuit is quite small and a pencil-like width before baking.
- The biscuits can be brushed with an egg-and-milk wash for a glaze effect.
- Sesame seeds are a delicious traditional addition to these biscuits. The biscuits can be dipped after the glaze to make sure they stay on. Otherwise, brush the biscuit with water and dip into a bowl of sesame seeds.
