Kothimbir vadi (coriander leaf cakes) are a crunchy savory snack made with chickpea flour, fresh coriander leaves, and spices. These cakes have a wonderful aroma because of the fresh coriander leaves and gram flour combination. The flavor of these cakes is enhanced by the addition of fresh ginger, garlic, cumin, and green chilies.

Ingredients

  • 1 cup besan (chickpea flour)
  • 2 cups coriander leaves, washed and finely chopped
  • 1 teaspoon cumin seeds
  • 3 to 4 garlic cloves
  • 1 green chilies
  • 1/4 inch ginger, chopped
  • 2 teaspoons white sesame seeds
  • 1 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala powder
  • 1/4 teaspoon dry mango powder
  • 1/4 teaspoon sugar
  • 2 teaspoons rice flour (optional, for more crunchiness)
  • 1 tablespoon oil, for kneading the dough
  • oil for shallow-frying or deep-frying
  • 1 teaspoon salt, or to taste

Instructions

  1. Make a coarse paste of chopped green chilies, ginger, cumin seeds, and garlic. Set aside.
  2. In a mixing bowl, add the chopped coriander leaves, besan powder, the green chili paste (from step 1), red chili powder, sesame seeds, garam masala powder, turmeric powder, dry mango powder, sugar, and salt. Mix well without adding any water. The moisture in the coriander leaves will be enough for kneading. If needed, sprinkle a few drops of water. Applying oil to your fingers, divide the dough to make 2 or 3 logs.
  3. Steam-cook the logs for 15 to 18 minutes. Turn off the heat and allow them to cool.
  4. Chop the logs to get many 1/2-inch thick slices. For shallow-frying these slices, heat some oil in a pan.
  5. Place the slices one near each other and add a few drops of oil to the top. While adding oil, roast both sides until golden brown.
  6. Serve scrumptious kothimbir vadi with tomato sauce or any other sauce. Enjoy the earthy flavor of these coriander leaf cakes!
