Ingredients

  • 1 cup raw peanuts
  • 1 cup water
  • 1 tsp salt
  • 1 tbsp green/mint chutney
  • 1/2 tsp red chilli powder
  • 1 tsp chaat masala
  • 1 medium onion, chopped
  • 1 medium potato, boiled and cubed
  • 1 medium tomato, chopped
  • 1/4 cup pomegranate pearls, plus more for garnish

Instructions

  1. In a pressure cooker, add the peanuts, water and salt. Close the lid, keep it on medium-high heat, give 2 whistles and then put off the heat.
  2. Open the cooker when the pressure subsides and strain out the water.
  3. Transfer the boiled peanuts to a mixing bowl and add the mint chutney, red chilli powder and chaat masala. Stir until well combined.
  4. Add the chopped onion, potato and tomato as well as the pomegranate pearls, saving a little for garnishing.
  5. Mix well, garnish with the remaining pomegranate pearls and serve.
