Ingredients

For the dough:

  • 1 1/2 cups atta (whole wheat flour)
  • 1/2 tsp salt
  • water as needed

For the stuffing:

  • 1/4 cup diced shimla mirch (bell peppers)
  • 1/4 cup diced gajar (carrots)
  • 1 diced small onion
  • 2 tbsp frozen corn, if using fresh corn, boil them until soft and then use
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp black pepper powder
  • 1 tsp tomato ketchup
  • 1 tbsp pizza sauce

For making the paratha:

  • 3 cheese slices
  • stuffing as prepared above
  • oil for frying the parathas

Instructions

  1. In a mixing bowl, add the flour and salt. Mix well. Add water little by little and knead into a dough that is neither too hard nor too soft. After the flour comes together, knead it until it is smooth then spread a little oil over it, cover with a wet cloth and let it rest for 10-15 minutes.
  2. While the dough is resting, prepare the paratha stuffing. In a large mixing bowl, add all the ingredients for the stuffing and stir until they combine well. Set aside.
  3. After the dough has rested, wet your hands with a little water and knead it for a few seconds. Now keep a tawa to heat up on low heat while you prepare the parathas.
  4. Dust your hands with dry flour, then divide the dough into 3 equal-sized portions. Take one portion, roll it into a ball, flatten it by hand, dust with dry flour and roll it out into a large round roti. Ensure the edges of the paratha are thinner than the centre.
  5. Place 1 cheese slice in the middle of the roti and spread one-third of the paratha stuffing over it. Wet the outer area of the paratha all around and then close the paratha as shown in the video to form a triangular paratha.
  6. Place the paratha on the hot tawa and cook for 15-20 seconds on both sides. Apply a little oil over it on both sides and fry it until it is golden and crisp all over. Prepare the other two parathas similarly.
  7. Serve the parathas with tomato ketchup.
