Singaporean rice is a delicious Asian fusion dish consisting of layers of rice, stir-fried vegetables, noodles, and spicy chicken curry that's topped with a yummy mayo sauce. It tastes heavenly, with every bite bursting with flavor and texture.

This tasty dish can be served at dinner parties as the main course. It's pretty impressive to look at, very delicious, and quite easy to prepare.

Ingredients

For the rice:

  • 2 cups rice, soaked for 1 hour
  • 1 tablespoon salt
  • Water, as required

For the noodles:

  • 1 cup spaghetti
  • 1 tablespoon salt
  • 2 tablespoons cooking oil

The vegetables:

  • 1 cup chopped carrot
  • 1 cup chopped capsicum
  • 1 cup chopped cabbage
  • 1 cup chopped green onion
  • 1 tablespoon salt
  • 1 tablespoon black pepper

For the mayo sauce:

  • 1/2 cup mayonnaise
  • 1 tablespoon vinegar
  • 4 tablespoons ketchup
  • 1 tablespoon chilli garlic sauce

For the chicken and gravy:

  • 1/2 kilogram boneless chicken
  • 1/2 cup oil
  • 1 small chopped onion
  • 1 tablespoon chopped garlic
  • 1 tablespoon black pepper
  • 1 tablespoon red pepper
  • 1 tablespoon cumin powder
  • 1 tablespoon hot sauce
  • 2 tablespoons chilli garlic sauce
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice

Instructions

  1. Add water to a pan and bring it to a boil. Add salt and soaked rice. When the rice is fully cooked, strain the water out.
  2. In another pan, boil water and add salt and oil. When the water comes to a rolling boil, add the spaghetti. When the noodles are fully cooked, strain out the water and rinse the noodles with cold water.
  3. In a frying pan, add some oil and stir-fry the chopped onion, carrot, capsicum, and cabbage. Add salt and pepper to taste. When the vegetables are fried, add the boiled spaghetti and mix well.
  4. Make the mayo sauce: In a bowl combine vinegar, ketchup, chilli garlic sauce and mayonnaise. Mix well and set aside.
  5. To make the chicken gravy: Add some oil to a pan and fry the chopped onion and garlic. Add the boneless chicken and fry until the chicken turn golden brown. Add salt, black pepper, red pepper, and cumin powder. Cook the chicken over low to medium heat.
  6. Add hot sauce, ketchup, soy sauce, chilli garlic sauce, and lemon juice. Cook for 5 to 10 minutes.
  7. In a serving dish, spread the first layer of boiled rice. The second layer should be spaghetti and stir-fried vegetables. Top it off with the chicken gravy and garnish with mayo sauce. Sprinkle some chopped spring onions on top. Bon appetit!
