Healthy High-Fibre Soup

Sprouted whole green moong soup is prepared with whole green gram sprouts. To give this soup its unique and delicious flavour, I have added onion, cumin seeds, ginger-garlic paste, and green chilli paste. Lemon juice adds a bit of tang.

Moong sprouts are very healthy. They have the potential to improve digestion, promote muscle growth, and boost immunity.

Ingredients

  • 100 grams whole green moong (gram) sprouts
  • water, as required
  • 1 onion, chopped
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • salt, to taste
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon green chilli paste, or to taste
  • 1 teaspoon coriander leaves, chopped
  • 1/2 tablespoon lemon juice

Instructions

  1. Pressure-cook moong sprouts with some water and salt to one whistle.
  2. Heat oil in a cooking pot. Add in the cumin seeds.
  3. Once the cumin seeds crackle, add the chopped onion and sauté well until translucent.
  4. Add ginger-garlic paste and green chilli paste. Fry until the raw smell dissipates.
  5. Add in the pressure-cooked moong sprouts with water. Mix well. Add more water if needed.
  6. Bring to a boil on high flame. Then turn the flame to low and let the soup cook for 8-10 minutes.
  7. Add lemon juice and mix well.
  8. Turn off the flame. Serve hot. Garnish with some coriander leaves.
