Healthy High-Fibre Soup
Sprouted whole green moong soup is prepared with whole green gram sprouts. To give this soup its unique and delicious flavour, I have added onion, cumin seeds, ginger-garlic paste, and green chilli paste. Lemon juice adds a bit of tang.
Moong sprouts are very healthy. They have the potential to improve digestion, promote muscle growth, and boost immunity.

Ingredients
- 100 grams whole green moong (gram) sprouts
- water, as required
- 1 onion, chopped
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- salt, to taste
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon green chilli paste, or to taste
- 1 teaspoon coriander leaves, chopped
- 1/2 tablespoon lemon juice
Instructions
- Pressure-cook moong sprouts with some water and salt to one whistle.
- Heat oil in a cooking pot. Add in the cumin seeds.
- Once the cumin seeds crackle, add the chopped onion and sauté well until translucent.
- Add ginger-garlic paste and green chilli paste. Fry until the raw smell dissipates.
- Add in the pressure-cooked moong sprouts with water. Mix well. Add more water if needed.
- Bring to a boil on high flame. Then turn the flame to low and let the soup cook for 8-10 minutes.
- Add lemon juice and mix well.
- Turn off the flame. Serve hot. Garnish with some coriander leaves.
