Satvik capsicum baby corn gravy is a no onion, no garlic side dish, that goes well with chapati, rice and dosa. Very easy, tasty and healthy gravy. Flavorful too.

Ingredients

  • 1 cup tomatoes, roughly chopped
  • 10-12 cashews, soaked in water
  • 1 teaspoon ghee
  • 2 tespoons oil
  • 2 inches long cinnamon
  • 1 cardamom
  • 1 teaspoon cumin seeds
  • 1 cup capsicum, chopped
  • 3/4 cup baby corn, chopped
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • salt to taste
  • 2 cups water, or as required
  • 1/4 cup coriander leaves, chopped
  • 1 teaspoon kasuri methi

Instructions

  1. In a mixer jar, take roughly chopped tomatoes, grind to fine paste.
  2. In a bowl, soak cashews in enough water for 20 minutes.
  3. Once well soaked, transfer to the mixer jar along with water, make fine paste.
  4. In a pan, heat ghee, oil.
  5. Add cinnamon, cardamom, cumin seeds, fry for a minute.
  6. Add chopped capsicum, chopped baby corns, fry well for 2-3 minutes or until vegetables shrinks.
  7. Add turmeric powder, red chili powder, coriander powder, garam masala powder, salt, mix and combine vegetables well with the spices.
  8. Once well combined, add prepared tomato paste, water, give a mix.
  9. Add prepared cashew paste, water, mix very well.
  10. Once well combined, close the lid and cook for 7-10 minutes in medium flame.
  11. Once vegetables are well cooked, add salt if required.
  12. Add chopped coriander leaves, kasuri methi, mix very well. Switch off the flame.
  13. Easy, tasty and healthy satvik capsicum baby corn gravy is ready to serve.
